Practical suggestions if you are missing any ingredients

If you don't have all the equipment or ingredients, don't panic, here are some substitutes you can use – that's the beauty of Pad Thai!

• If you don't have a wok, a large frying pan will do!

• If you don't have rice noodles, you can use wheat noodles.

• Tamarind paste adds a touch of acidity, but you can replace it with a little lemon juice.

• Sweet soy sauce adds sugar, so you can replace it with a spoonful of sugar.

• If you want to add a personal touch to your dish or replace the bean sprouts, you can add courgette or pepper, cut into very thin strips.

Pad Thai is an iconic dish in Thai cuisine, loved for its unique flavour and nutritional value. This rice noodle dish is perfect for those who want to prepare a delicious meal with simple ingredients. In this article, we will provide you with an easy-to-follow Pad Thai recipe you can make at home, as well as practical tips for preparing it, suggestions and ideas for serving it.

Pour réaliser votre Pad Thaï, pour 4 personnes environ, voici les ingrédients nécessaires :

250 g rice noodles

• 150 g cooked peeled or dried prawns

• 500 g chicken breast (or tofu for vegetarians)

• 2 eggs

• 100 g bean sprouts

• 1 carrot

• 3 tablespoons tamarind paste

• 2 tablespoons fish sauce (nuoc mam sauce)

• 3 tablespoons sweet soy sauce

• Crushed peanuts

• 3 limes

• Fresh coriander

• Thai lemongrass

• 1 or 2 cloves of garlic

• 2 or 3 spring onions

• A little oil (sunflower or other, but fairly neutral in taste)

Pad Thai Recipe

Ingredients

Bring a large pot of water to the boil, add the noodles as soon as it boils, then turn off the heat. Leave them to soak in the boiling water for 2 to 3 minutes, then drain, rinse with cold water and place in a salad bowl while you prepare the rest.

• Dissolve the tamarind paste in a small bowl of water for 5 minutes, stirring a little, then strain to collect the juice and set aside.

• Cut the chicken or tofu (or both) into small pieces of 2 or 3 cm.

• Crush the garlic and chop the onions as finely as possible.

• Crush the peanuts coarsely with a pestle

• Chop the coriander coarsely

• Squeeze the juice from a lime

• Heat a little oil in the wok, then add the chicken or tofu and fry for 5 minutes

• Add the crushed garlic, onions, fish sauce, tamarind juice, sweet soy sauce and prawns to the chicken in the wok, mix well, cover and cook for 5 minutes

• Add the drained noodles to the wok, mix gently and cook for 2 minutes

• Try to push the mixture to one side of the wok to make room at the bottom of the pan and crack your 2 eggs into it. (If your wok is not big enough, you can remove the mixture and crack the eggs separately into the sauce at the bottom of the same pan, then put everything back together afterwards).

• Crack and gently mix the eggs, as if making scrambled eggs, but without mixing them too much, so that small pieces of white and small pieces of yolk are visible, then gently mix them with the rest of the preparation.

• Add the bean sprouts, half the coriander and the lime juice, stop cooking, and it's ready!

• Plate the Pad Thai in advance.

• Sprinkle each plate with crushed peanuts, the rest of the coriander and a drizzle of lime juice.

• Cut the last lime into 4 pieces and place one piece in the corner of each plate.

• Serve immediately while hot!
